Having difficulty getting enough greens in your diet?

The following excerpt is from Green For Life by Victoria Boutenko.

“Greens Make The Body More Alkaline”

After staying so many years on a 100% raw diet, I have come to the conclusion that it is impossible to maintain a good alkaline pH balance without consuming large quantities of dark leafy greens, approximately two bunches or one to two pounds every day.

That’s a lot of green!  If you have a blended green drink or Green Smoothie and then a large salad, you have likely accomplished that goal.  But it’s hard to do on a daily basis, unless you are super-committed and continually have access to fresh greens and a kitchen.

Powdered greens are a wonderful way to sneak more of these life-enhancing veggies.  You can buy them at health food stores but they are super expensive.  This idea came from my dear friend, Dr. Kat.  She was searching for a way to use up her weekly allotment of greens from the organic cooperative that she belongs to and had the brilliant notion to dehydrate the leftovers!

How-to dehydrate greens

Once they are washed and lightly dried, you simply lay them out flat on the dehydrator screens.  I recommend removing the spines in kale and collard greens as they will become rather tough and hard to break down.  Dehydrate between 105-115 degrees until they are completely dry and crisp.  Next, place them in your food processor or if you have a dry container pitcher (Vitamix or Blendtec) that will also work.  Process until it becomes a very fine powder.  Store in a covered jar.  If you don’t plan on using them up soon, you can also store them in the fridge or freezer.

How to use your green powder

Add to blended drinks, cooked grains or beans, sprinkle over salads, add to crusts that are either raw or cooked, add to soups, sauces or dressings.  I especially love adding them to desserts that I make for friends and family because they are undetectable, yet add that alkalizing protein that helps slow down the sugar absorption.  Sprinkle on your pet’s food.  Be creative!

But don’t rely on only powdered greens!  Make sure to get as many fresh greens in your diet, as well.
