Recipes for Savory and Sweet Plantain Treats
Chips have all but disappeared from my pantry, which is a good thing as I am powerless over their control :- ) Occasionally if I decide to indulge, it is either with the Simply7 seal-salt- flavored lentil chips or plantain chips.
All packaged plaintain chips are fried and usually in questionable (possibly hydrogenated) oils; Most often I will find brands that are fried in canola oil, which is most likely going to be genetically modified. It’s certainly better than many snack options but I’ve been envisioning this raw version for some time and decided to experiment last week in the Raw Fusion Kitchen.
Combating Carb Cravings with Cauliflower
Cauliflower has become one of my favorite foods and definitely a great alternative to potatoes, corn, wheat and other grains as the carb impact is much lower. A member of the Brassica family of vegetables, a recent study found that these crunchy veggies can lower breast cancer risk by at least 15%.
Steamed and smashed with a bit of healthy oil and either a touch of cream or nut milk, it makes a hearty substitute for mashed potatoes. Roasted over leafy greens, it’s one of my favorite Raw Fusion Meals. It even makes a nice snack, dehydrated as a popcorn substitute for movie night.
So when I heard the buzz about making a pizza crust with cauliflower, I was all over that idea!
Superfoods are foods that are exceptionally high in essential nutrients. Some examples of these that you may already know are blueberries, salmon, almonds, walnuts and organic apples.
These nutritional powerhouses are extremely popular with raw foodists, as they offer great taste and variety to the lifestyle, along with particularly potent vitamins and minerals.
Lucuma powder comes from a small fruit that grows in Chile, Ecuador and Peru. It surpasses even chocolate and vanilla as the favorite ice cream flavor in most of South America—and even some European countries! High in phytonutrients, this superfood serves as a sweetener substitute easily metabolized with a very low glycemic index, making it a safe, sweet option for diabetes and hypoglycemia disorders. Naturally gluten-free, it is chock-full of fiber, antioxidants, carotene, minerals and Vitamin B3.
When I was in the final stages of getting the Raw Fusion book series finished I traveled to Arizona for the Raw Spirit Festival (2010) where I met a very talented chef, Karen Osborne. She made a spectacular dessert for one of the events and I asked her if she’d like to contribute to the recipes portion of the book.
Her Carob Crispy Candies are so simple and satisfying that I include them in the “Cravings Conquerors” category. It’s hard to believe that something that tastes this good can provide such health benefits!
Providing you have these items on hand, these candies take only minutes to prepare and a couple of hours to set in the fridge.
